What to do with over abundant zucchinis

The garden is overflowing with produce, so many tiny to mid sized zucchini’s popping up every day, if you leave them for just a second they explode into gourds suitable only for the chickens.

I had these for lunch today, mix 200g of ricotta, 50g of blue cheese and dill together. Scoop out the middle of the zucchini’s (add this to the mixture) and then spread back in, roast in a 200C oven for 25mins till bubbly and golden, yummy on hot sourdough rolls with a spread of garlic mayonnaise.
