FINGER LICKING

Sometimes I crave a bowl of crunchy chicken wings, just the idea of biting through a crispy exterior to the soft juicy centre makes me want to cook them.  I marinated the wings overnight in a mixture of  1/2 tin of coconut milk, ground cumin, coriander, turmeric, 1/2 onion grated, 1 clove garlic, salt, pepper, grated lemon rind and a dash of fish sauce.  Then just before shallow frying in a pan I coated each wing in flour then fried till golden.    Easy finger food for a party or great cold for a picnic or kids party.
