DOUBLE CHOC-CHIP-CRANBERRY COOKIE

Easy Peasy Cookies for school lunches, although I thought I’d made plenty, then I looked in the tin and we have some leftover ‘crumbs’ ….  seriously kids.  Might make the next batch with some white chocolate, coconut and macadamias or maybe with walnuts, milk chocolate and coffee.   Oh the joys of weekend baking 🙂

Makes 16

125g butter, softened, 1 cup brown sugar, 1 tsp vanilla extract, 1 egg, 1 1/2 cups of self raising flour, 100g dark chocolate roughly chopped, 100g white chocolate, roughly chopped and 1/4 cup dried cranberries.  Preheat oven to 180C.  Line a baking tin with baking paper.  Beat butter and sugar together, add egg and vanilla, sift in flour, fold through the cranberries and chocolate.  Place tablespoons onto the lined tray, allow for expansion.  Bake for 15-20mins.
