Wake Up Sunshine

Autumnal colours are out, Canberra is wet, cold and freezing and what better way to celebrate Anzac Day than have a breakfast of eggs and baked beans, almost ready to face the world or slink back into bed…

Tomato Sauce – 1 onion sliced, 1 carrot sliced, 1 stick celery sliced, 1 clove garlic sliced – cook till soft in some oil, add 1 tin of tomato and 2 cups of water, reduce down for around 20mins till vegetables are soft, puree mixture.

To assemble – In a oven proof dish put 1 tin (washed) cannelloni beans, tomato mixture, smoked trout (or sausage is good as well), chopped spinach,  make hollows for some eggs – drop in, add a splash of cream around the eggs and top with feta.  Cook 170C for 20-25mins till egg whites are cooked but yolks are still runny.  Serve with hot buttered toast.

  1. The air was quite frosty here in Sydney this morning too. And while we had scrambled eggs cooked in bacon fat, your proper baked beans would have been delicious too – maybe on the weekend!
