My favourite vegetable salad is achar achar, its a type of Malaysian spicy salad which uses fresh vegetables and spicy paste to combine it together. I am still trying out variations but the one I made the other day was basically as below, feel free to add or subtract any type of crunchy vegetable you like.
1 cucumber, 2 carrots (blanched for 30 secs),1 zucchini – cut all of these into battens), 15 long green beans (blanched for 30 secs), 1/2 cup diced fresh pineapple.
Pound or puree in small blender – 1 small piece of fresh tumeric (about 2cm long), belacan – 1 teaspoon roasted then broken up, 3-4 shallots and 1-2 dried chillies (can use fresh if you like). Fry all of these in a bit of oil till fragrant. Add 1 tablespoon rice vinegar, a pinch of salt and 1 teaspoon sugar.
Toss in veggies and sprinkle with toasted crushed salty peanuts before serving.
