OK so I made our favourite slice a wee bit wrong, but you know what i’m going to make it this way from now on, with no sugar in the base, you get a rich crumbly slightly bitter cocoa crunch from it.
1 cup self raising flour, 2 tbls cocoa, 3/4 cups desiccated coconut, 125g butter, 200g desiccated coconut, 400g condensed milk, 200g glace cherries, chopped 200g good quality chocolate
Preheat oven to 180C, grease slice tray, combine flour, cocoa and coconut. Melt butter and mix into dry ingredients, press into tray. Bake for 15mins.
Combine coconut, condensed milk and glace cherries, spread over chocolate base.
Melt chocolate and pour over cherry filling. Refrigerate until set.
Best eaten with a steaming hot cup of tea or coffee.
