A small package of baked goodness for my dad’s birthday this year. They were parceled up in a crunchy birthday suit of baking paper and homemade tags.
180g unsalted butter, 3/4 cup brown sugar, 1 teaspoon vanilla extract, 2 eggs, 2 cups plain flour, 1/4 cup almond meal, 1 teaspoon baking powder and whole almonds to decorate.
Preheat oven to 180ºC. Place the butter, sugar and vanilla in the bowl of an electric mixer and beat until pale and creamy. Gradually add the eggs and beat well. Add the flour, almond meal and baking powder and beat until a smooth dough forms. Either roll 2 tablespoonfuls of the mixture into balls, or roll out and use a stencil to cut biscuits out. Place on baking trays lined with non-stick baking paper and press to flatten, garnish with whole almonds. Bake for 12–15 minutes or until golden. Allow to cool on the trays. Makes 12.
